malai kofta_2

Have you encountered Malai Kofta? India’s favorite dish is a rich union of fried potato, vegetables and cheese dumplings in a spiced tomato gravy. This all-time favorite Indian dish, tastes excellent with rice or flat bread.

Cooking time : 30 minutes

Kofta (Potato Veggie Dumplings)

  • 2 cups russet potatoes, peeled and chopped

  • 1/2 cup carrot, chopped

  • 1/2 cup peas, frozen

  • 2 Tbsp toasted cashews, finely chopped

  • 1/4 tsp turmeric

  • 1/4 tsp black pepper

  • 1/4 tsp ground cumin

  • 1/2 cup chickpea flour

  • 1/4 cup fresh coriander leaves, chopped

  • 1/2 tsp salt, or to taste

Tomato Gravy

  • 1 tsp cumin seeds

  • 1 tsp ginger, peeled and finely chopped

  • 1 cup onion, diced finely

  • 1 tsp chili, finely chopped

  • 1 cup tomatoes, pureed

  • 2 Tbsp cashews, toasted and ground (coffee grinder works well)

  • 1 cup coconut milk

  • 1 cup water, or as needed

  • 1/4 tsp garam masala

  • 1/4 tsp turmeric

  • 1/4 tsp coriander, ground

  • 1/4 tsp salt, to taste

  • 1/4 tsp black pepper

  • 1/4 cup fresh coriander leaves, chopped

  • 1 Tbsp olive oil

  1. Boil 4-5 glasses of water in Handi (pot pan) and add potatoes and carrots. Cook for 10-15 minutes until easily mashable with a fork. Add peas and cook 1-2 minutes more, then drain water and transfer the vegetables to a large mixing bowl to cool.

  2. On the other hand, lets start making the gravy. Get the sauce pan on work. Heat 1 Tbsp of olive oil. Add cumin seeds and cook until they begin to crackle. Add onion, ginger, and serrano chili (optional). Cook for 3-4 minutes, stir occasionally until onion begins to brown. Add tomatoes and cook for 3-4 minutes more. Transfer mixture to a mixer grinder and blend until smooth.

  3. Add oil and the remaining ingredients respectively to a stew pan, saving water for the end. Add as much of water as you need to make a nice gravy consistency (will continue to thicken as it cooks). Combine ingredients and stir well, let it bubble gently over low heat. If too watery, you can add additional cashew powder to thicken it.

  4. Add the rest of the ingredients to koftas, stir and a thick gravy will form. Make small sized kofta balls. Heat oil in a fry pan and place the balls a few inches apart from each other for uniform cooking. Cook until crispy on the bottom and flip over until crispy on all sides.

  1. When koftas are done, drop them in the heated gravy and serve immediately with rice or bread of your choice

Malai Kofta is undoubtedly an asset to the art of cooking. Try this ‘must have’ dish with Premier kitchen appliances.
